Akara breakfast recipe

This is a Nigerian delicacy called Akara served with fresh broccoli and cherry tomatoes. Akara is a savoury beancake that is shallow fried. Its soft, delicious and perfect for breakfast

Ingredients

1 cup peeled black eyed beans

2 cups of cold water

1 raw chopped hot pepper

Pinch of Salt

1/2 a chopped onion

3 handfuls of prawns (either cooked or raw)

1 cup oil for frying


Method

Put a saucepan on medium heat and add oil. In a blender, mix the beans with 1/8th water first and mix. Add more water gradually and mix in between. The mixture should be a smooth paste. You are aiming for the consistency of houmous. Pour the blended beans into a bowl. Mix in the prawns, salt, pepper and onions and mix well for about 4 minutes.


Spoon the batter into the hot saucepan, one spoon at a time and space it out in the saucepan.


Fry on each side until it is golden brown. This should take 1 - 3 minutes on each side. Once both sides are golden brown, remove the Akara balls out with a spoon and drain the Akara on kitchen paper towels.
