Bourbon Banana Nut Bread

Bourbon Banana Nut bread

Caramelised bananas ingredients

3 ripe bananas

1 tablespoon of hot water

2 tablespoons of light brown sugar

1 tablespoon of unsalted butter

3 tablespoons of bourbon

Bread ingredients

75g unsalted butter

100g light brown sugar

1 egg

1 teaspoon baking powder

1/4 teaspoon bicarbonate soda

1/4 teaspoon salt

200g plain flour

2 handfuls of whole hazelnuts


Start by making the caramelised bananas. Place the bananas in a frying pan. Add the water, bourbon, sugar and butter. Let simmer on low - medium heat for 4 minutes. Turn over the bananas so that both sides cook. Mash the bananas with a spoon or fork and leave to cool for 5 minutes.

Put the butter, sugar, flour, salt, baking powder, bicarbonate soda into a bowl. Mix well. Add the bananas. Add the flour and mix. Add the hazelnuts.

Line a loaf tin with parchment paper. Pour the mixture into a loaf tin. Bake the bread for 55 minutes at 180c.

Leave to cool for 10 minutes.
