What is Oxtail? It is the tail of an Ox. It tastes rich meat on a bone and is best enjoyed slow cooked so that it it nice and tender. The Oxtail in these buns are slow cooked and then place in the middle of buns that are oven baked.

These buns are delicious and ultimate comfort food, great for these cold winter months.

Oxtail Ingredients:

1 heaped tablespoon butter

1 carrot

2 celery sticks

4 cloves garlic

1 kg chopped Oxtail

1 tablespoon thyme

1 tablespoon oregano

1 tablespoon all purpose seasoning

1 tablespoon cayenne pepper

1 bay leaf

500ml red wine

1 tin of tomatoes

2 tablespoons salt

500ml meat stock

Bun ingredients:

300g self raising flour

1 teaspoon salt

1/2 cup of warm water

1 teaspoon yeast

1 teaspoon sugar


Melt the butter, add the carrots, chopped onions, celery, garlic into the pan. Sautee the vegetables for 2 - 3 minutes. In a separate bowl season the Oxtail with thyme, oregano, bay leaf, all purpose seasoning and cayenne pepper.

Cook the Oxtail for 2 hours or until it is very tender and easily falls apart on a fork.

Start with two things a measuring cup and a big mixing bowl. In a measuring cup, add water, salt, sugar and yeast and mix. In the mixing bowl, add the sifted flour. Max a well in the centre of the bowl with a spoon. Pour in the ingredients from the measuring cup into the flour. Stir. Mix well with your hands. Add more water as needed. Divide the dough into 8 - 10 balls.

Put the 2 teaspoons of shredded oxtail into the centre of the dough. Pull up he sides and twist the top of the bun. Glaze with melted butter (just 2 tablespoons needed). Put the Oxtail buns in the oven for 10 - 15 minutes at 180C. Enjoy!
