Supermalt cake recipe




I had a bottle of unopened Supermalt leftover after a party and I wondered what it would taste like in a cake. One of my friends really loves the drink and curiousity sent me into the kitchen to experiement. I tried the recipe once then tweaked it and tried it again. For all the lovers of the drink, this is my recipe for my Supermalt cake. Give it a try and I hope you enjoy it as much as my friends did.


What is Supermalt? Supermalt is a non alcoholic, malt drink. It's loved by a lot of people especially many Nigerians and Caribbeans across the diaspora. The drink was orginally developed for the Nigerian army and it contains a high amount of vitamin B. How would I describe the taste of Supermalt? I would say it's frothy, tastes sweet and has a strong malt flavour. The Supermalt cake also tastes malty and is delicious.


This recipe makes a 4 inch round sponge which feeds four - six people.


Ingredients for the cake

250g muscovado sugar

250g plain flour

250g butter

4 teaspoons of evaporated milk

32g Horlicks malt powder

5 teaspoons Supermalt

1 teaspoon baking powder

2 eggs

2 teaspoon of the Supermalt syrup


Method

Cream the butter and sugar in a bowl. Add the eggs one at a time. In a separate bowl sift the flour. Sifting the flour will add air into the mixture which is what you need to give the cake a nice fluffy sponge. Add the flour, baking powder and malt powder to the egg mixture. Mix it all together. Add the evaporated milk and the syrup and mix together. Lastly add the supermalt. Bake in to oven at 160C for 1 hour.


Ingredients for Supermalt syrup

150ml Supermalt

1/4 cup of sugar

1 tablespoon of treacle


Method

Boil the Supermalt for 10 minutes on medium heat. Add the sugar and stir. Once the sugar is dissolved, add the treacle and stir. Leave the syrup to cool.


Assembling the cake


If you want to decorate the cake or have a layer of buttercream with the cake, this is a simple and tasty buttercream recipe. 200g butter and 200g icing sugar and whisk the two until it is combined.


Once the cake has been baked, and is fresh out of the oven, pierce some holes in the cake with a toothpick and sprinkle 1 -2 tablespoons of the syrup ontop of the cake. You can add 1 - 2 tablespoons of syrup to the buttercream to add some extra flavour. Or the syrup can be drizzled over the cake as you eat it.
